Arbi Ki Galawat, Buckwheat Paratha and Masala Popdums: Masterclass by Chef Gaurav Raghuvanshi

A rather unusual and not-so-commercial ingredient, colocasia known locally as arbi gets a makeover as a vegetarian version of the galawat kebab. Arbi is indigenous to the Indian subcontinent and this dish is an effort to make it a beloved food item yet again. Served with buckwheat paratha (flatbread) and sago masala papads, the arbi galawat, much like the name suggests, literally melts in the mouth.
